Shiitake mushrooms are very nutritious. They contain a variety of vitamins and a wide range of amino acid complex proteins. Interestingly, shiitake mushrooms are one of the few foods where vitamin D can be found without artificially added vitamin D. In traditional medicine, they have been used since ancient times to treat various digestive diseases or simply to boost immunity.
They can also be used simply for their nutrients, with water, juice, plant-based milk or yoghurt.
Of course, no one can imagine the famous miso soup without shiitake mushrooms. Firstly, mushrooms have a porous texture, so they absorb a lot of water and get wet. However, adding them to the soup at the end gives it an additional and rich layer of flavour. If you want to add a similar richness to vegetable broth, add dried shiitake mushrooms!
And what to do with the mushroom powder? Use as a seasoning, with salt and pepper only. This trio is a perfect match because shiitake powder is just a momentary dose of umami flavour! Add a teaspoon or two to tofu products, cooked noodles, soups and stick to it – the taste is completely different – rich and bright.
