Tiger nuts are an edible variety of fern (Cyperus esculentus) that tastes a bit like ground almonds or pecans because the tubers are sweet.
Tiger nuts have a long history dating back thousands of years – evidence of their use has been found in ancient Egyptian tombs. They were an important part of the diet of early civilisations, including the Egyptians and Africans, valued for their nutritional and medicinal properties. Tiger nuts brought the Moors to Spain 8. century and became the main ingredient in the traditional sweet nut drink Horchata de chufa. Over time, their cultivation spread to various regions of Europe, Africa and America, where they were used for food, medicine and even oil production. Nowadays, tigernuts are still widely consumed around the world, especially in diets promoting healthy eating, as they are rich in fibre, vitamins and resistant starch. Tiger nuts are a nutritious fruit with many health benefits. They are excellent sources of fibre, which is good for digestion. They are rich in vitamins and minerals, so they help improve overall health.
It is advisable to soak tiger nuts for at least 4 hours before eating. After drying, they are hard, but after soaking for at least a couple of hours, they become soft. They can be used to make a vegan nut drink – a great alternative to animal milk. Tiger nut flour is a popular choice for gluten-free baking, offering a naturally sweet and nutty flavour. The versatility of nuts makes them ideal for a wide range of diets, including vegan, paleo and gluten-free.
The recommended dose of nuts depends on individual tolerance and dietary needs. The general advice is to consume about 20-30 grams (about a handful) per day to get the health benefits without overloading the digestive system. If tiger nut drink or flour is used, it should be consumed in moderation as it is high in fibre and carbohydrates.
Although these nuts have many benefits, excessive consumption can cause digestive upsets such as bloating, gas or diarrhoea, especially in sensitive people. Because of their high fibre content, they can be more difficult to digest if they are introduced too suddenly. In addition, some people may be allergic to tiger nuts.

Recipe –
A simple recipe for homemade tiger nut drink (Horchata de Chufa) – a delicious and naturally sweet drink.
Composition:
1 cup (150 g) dried tiger nuts
3 cups (750 ml) of water
1-2 tablespoons of sugar or maple syrup (optional)
½ teaspoon cinnamon (optional)
1 teaspoon vanilla extract (optional)
Instructions:
Soak the nuts – put the dried tiger nuts in a bowl and cover with water. Let them soak for at least 12-24 hours (the longer the softer they get).
Blender – Grind the nuts and place them in a chopper/blender with 3 cups fresh water. Mix on high speed for about 2-3 minutes until the mixture is smooth.
Straining – Strain the mixture through a fine sieve into a bowl, squeeze out all the liquid.
Flavouring (optional) – add syrup, vanilla or cinnamon to add sweetness and other flavours. Mix well.
Chill and serve – keep in the fridge for a couple of hours before serving.
